Thanksgiving Recipe Week, Day 6

Today's Thanksgiving recipe is... Cornbread Muffins!

I love cornbread. I love muffins. The combination of cornbread and muffins is pure genius. Genius, I tell ya! If you don't eat all these the day you cook them, mix them up in a glass of milk for a delicious night-time snack! Nom!!

Cornbread Muffins
Ingredients
3/4 cup cornmeal
1 cup milk
1/2 cup wheat flour
1/2 cup all-purpose flour
1/4 cup suar
4 t. baking powder
1 egg
1/3 cup oil

Mix cornmeal and milk in a small bown to allow the cornmeal time to soak. In a large bowl, mix together flours, baking powder, and sugar. Mix the egg and oil together and add to cornmeal and milk mixture. Add the two mixtures together and stir until combined. Pour into a muffin pan and bake for 12 minutes or until a toothpick comes out clean.
